2 multi-colored bell peppers (red and yellow recommended)
1 medium red onion
1 large carrot
1 head of broccoli (about 8 ounces, stem included)
2 tablespoons olive oil, divided
1 teaspoon dried oregano
½ teaspoon kosher salt
Freshly ground black pepper, to taste
Instructions:
Prepare the Vegetables: Begin by thinly slicing the bell peppers and red onion. Cut the carrot into thin rounds on the bias, and break the broccoli into small florets.
Season: In a large bowl, toss the sliced vegetables with 1 tablespoon of olive oil, dried oregano, kosher salt, and a generous amount of freshly ground black pepper until everything is evenly coated.
