  • 2 multi-colored bell peppers (red and yellow recommended)

  • 1 medium red onion

  • 1 large carrot

  • 1 head of broccoli (about 8 ounces, stem included)

  • 2 tablespoons olive oil, divided

  • 1 teaspoon dried oregano

  • ½ teaspoon kosher salt

  • Freshly ground black pepper, to taste

Instructions:

  1. Prepare the Vegetables: Begin by thinly slicing the bell peppers and red onion. Cut the carrot into thin rounds on the bias, and break the broccoli into small florets.

  2. Season: In a large bowl, toss the sliced vegetables with 1 tablespoon of olive oil, dried oregano, kosher salt, and a generous amount of freshly ground black pepper until everything is evenly coated.

  3. Cook: Heat the remaining tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned vegetables to the skillet and cook for 10 to 12 minutes, stirring occasionally, until the vegetables are tender and lightly charred.

  4. Final Seasoning: Taste the stir-fry and, if needed, add a few pinches more salt. Adjust the seasoning to your preference.
