Ingredients:

1 lb Shrimp, raw
Produce:
2 large Avocados
8 oz mixed Cherry Tomatoes
1 good handful of Cilantro or Flat-Leaf Parsley, fresh leaves
1 fresh Garlic clove
1 Green chili
1 large fresh Lemon
Baking & Spices:
2 tbsp Olive or Avocado oil
Sea salt and fresh ground black pepper
Instructions:
1. Cook the Shrimp: Heat one tablespoon of oil in a large skillet over medium-high heat. Add the shrimp and minced garlic. Cook for 3-4 minutes, or just until the shrimp turns pink and is no longer translucent. Season with sea salt and pepper to taste, then remove from heat.
2. Combine the Salad: In a large bowl, add the cooked shrimp, chopped tomatoes, diced avocado, sliced chili, and chopped cilantro leaves.
3. Dress & Serve: Drizzle with the remaining tablespoon of oil and squeeze in the fresh lemon juice, adding zest for an extra zing. Gently toss to combine all the ingredients. Adjust seasonings to your taste and serve immediately.
