Ingredients:

  • 1 ¼ pounds jumbo shrimp, peeled and deveined

  • 6 medium scallions, cut into 1 ½-inch pieces

  • 2 teaspoons toasted sesame oil

  • 2 teaspoons olive oil

  • Bamboo skewers

For the Teriyaki Sauce:

  • ¼ cup Tamari soy sauce (use regular soy sauce if not avoiding gluten)

  • ¾ cup water

  • ⅓ cup allulose monk fruit sweetener (or preferred keto/low-carb sweetener)

  • 1 ½ tablespoons rice vinegar (or 2 tablespoons dry sherry)

  • 4 teaspoons ginger-garlic paste (or 1 ½ teaspoons each of freshly grated ginger and garlic)

  • 1 teaspoon arrowroot powder (or ½ teaspoon xanthan gum for thickening)

Instructions:

1. Prep the Skewers:

  • Soak the bamboo skewers in warm water for at least 30 minutes to prevent burning.

  • Fold a piece of foil to protect the skewer handles from burning during grilling.

2. Make the Teriyaki Sauce:

  • Combine soy sauce, water, sweetener, vinegar, and ginger-garlic paste in a small pot and bring to a boil over medium-high heat.

  • Reduce to a simmer for 5 minutes, then add the arrowroot slurry (mix 1 teaspoon arrowroot powder with 2 teaspoons water) and simmer for another minute until thickened.

  • Strain the sauce, pressing on the solids for maximum flavor, and divide it into two portions for glazing and serving.

3. Prepare and Grill the Shrimp:

  • Skewer the shrimp, alternating with pieces of scallion, and secure each shrimp at two points to help maintain their shape.

  • Mix sesame and olive oils and brush over the skewers.

  • Grill over medium heat, placing the foil under the handles. Grill each side for 2-3 minutes, brushing with teriyaki sauce when you flip them. Cook until shrimp are pink and opaque.

4. Serve:

  • Give the cooked skewers a final brush with the teriyaki sauce and serve with the reserved sauce on the side.

This Low-Carb Teriyaki Shrimp Skewers recipe is a fantastic choice for a healthy, flavorful meal that keeps carbs in check without sacrificing taste. Perfect for diabetics or anyone following a low-carb diet, these skewers offer a delicious way to enjoy a gourmet meal at home. Enjoy your cooking and the delightful flavors of your labor!
