- 2 Tbsp olive oil

- 2 tsp dijon mustard (adjust to taste)

- 1/4 tsp garlic powder or 1 fresh clove grated (to taste)

- 1 tsp sea salt

- Ground pepper, to taste

- 2 tsp honey

Directions:

1. Prepare the Dressing: In a large bowl, whisk together olive oil, lemon juice, mustard, garlic, salt, and pepper to form your salad dressing.

2. Mix the Salad: Add the chickpeas, olives, onions, tomatoes, and cucumber to the bowl. Toss well to ensure everything is evenly coated with the dressing.

3. Incorporate Fresh Herbs: Add the chopped parsley, dill, and mint to the salad. Toss again to distribute the herbs evenly.

4. Season to Perfection: Taste and adjust the seasoning if necessary, adding more salt, pepper, or mustard as needed.
